Fajita Style Peppers and Onions


Ingredients:
  • 1 bag of frozen mixed pepper slices or 3-5 sliced peppers
  • 1 large onion sliced into strips
  • 2 hefty Tbs of peppers and adobo sauce from a small can of chipotle peppers in adobo sauce
  • 1/3 cup loosely packed chopped fresh cilantro
  • 1 tsp cumin
  • 1 Tbs of chopped garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup EVOO
Directions:
  1. heat EVOO in a large skillet or stir-fry pan over medium high heat
  2. add onions, chipotle peppers with sauce, cumin, salt, pepper and garlic to pan
  3. when onions and garlic are aromatic add peppers and turn heat to high
  4. make sure to keep the veggies moving so they do not burn on the pan
  5. remove from heat once peppers are cooked with a little firmness to them and place in a serving dish
Commentary:
This is the most basic fajita stir-fry recipe you can try. This one is kind of light on the cilantro so if you like the stuff you can easily double the recipe without overpowering the chipotle flavor. To that if you don't like chipotle omit it from the recipe and add 1 to 2 tsp's of black pepper and more cumin. I use this recipe just about once a week b/c I use it as a filling for my frittata's, burritos, fajitas, curries and just about anything else that needs a bit of color and flavor. This recipe can also be expanded to include other veggies as well as meats to make a heftier dish. I hope you all enjoy!
