- 2 can black beans
- 1 small can of corn or 1 cup frozen corn
- 1/4 cup of loosely packed fresh chopped cilantro
- 1 1/2 Tbs EVOO
- 1/2 onion finely chopped
- 2 tsp chopped garlic
- 1 tsp chili powder
- 1 packet of Sazon Con Cilantro and Achiote
- heat EVOO in a medium sauce pan on medium high heat
- sautee onions, garlic, corn and Sazon in pan
- when onions are translucent mix in beans and cilantro and reduce heat to medium low
- cook for 7-10 minutes
- remove from heat and serve while still hot
I actually acquired this recipe from my old roommate a few years ago. This dish makes an excellent side dish to any Latin dish and a great filling for Mexican dishes. You could also make this a dip for chips and veggies by pureeing or mashing the beans prior to cooking. For all of you cilantro lovers you should try doubling the amount for a bolder taste.
