Sometimes there is just no time, that’s when I pull protein containing leftovers out of the fridge and throw them in the microwave OR put on the water for fast cooking angel hair. I then pair them with these super easy and quick veggies.
Prep Time: 5 minutes (about 30 seconds if you use pre chopped veggies)
Cook Time: 7 minutes
Ingredients
- 2lbs of your favorite veggies (I used zucchini and tomatoes- usually I add mushrooms but we didn’t have any)
- ¾ cup of your favorite pasta sauce or combination of sauces (I use ½ cup pesto and ¼ cup garlic tomatoes- it’s what was left over in the fridge)
Heat your pan for about 45 seconds then spray with pan spray. Put the veggies in the pan according to cooking time (start with onions or shallots, give it a minute and zucchini, eggplant, broccoli- that type of thing, throw tomatoes in last). Once they have started to soften dump on the sauce and cook for another minute or so. Serve along side left over baked chicken or on top of angle hair pasta.
