- 1/2 cup pine nuts
- 2 cups fresh loosely packed basil leaves
- 1 cup fresh loosely packed parsley leaves
- 1/2 cup Parmesan or Romano
- 2 garlic cloves
- 1/4 teaspoon salt
- 1/2 cup extra-virgin olive oil
- Toast pine nuts in a skillet over medium heat until fragrant, about 5 minutes
- Combine all ingredients in a food processor
- Pulse until well combined
So this is a great all around pesto. Great on sandwiches, pasta, salads...your fingers! Ha...its mighty tasty. As written you notice all the herbs and cheese when you taste it, if you are a fan of salt you should play around with the amount. I hope you enjoy.
